Vinification
Hand-harvested in mid-September / early October, fermentation in stainless steel tanks, maceration for approx. 20 days. Matured in barriques for 18 months, bottled in October.

The name “PONENTE” refers to the West and the Mediterranean wind of the same name—a decisive factor for the terroir of this wine, which we describe as a “Tuscan sunset in a glass.” We strictly avoid the use of synthetic products for fertilization and pest control, and we also follow rigorous guidelines in the cellar; therefore, this wine is organically certified.

Vinification: Handcrafted and 18 months in Barrique
- Harvest: Selective hand-harvesting (mid-September to early October).
- Aging: After fermentation in stainless steel tanks, the wine matures for 18 months in second-fill barriques. This adds depth without masking the fruit.
- Bottling: The wine is bottled in October to showcase the ideal balance between oak and fruit.
